In a system, each order made by a client has a status, which can be Canceled, In Production, or Delivery.
I'm writing a knowledge-base article about the status choice, and the title will be
Order's Status: what do they mean?
My question is:

In the case of writing your title, I'd use:
"Order Statuses: what do they mean?"
This is because you're talking about order statuses in general as a category. The switch to the plural "statuses" is because of the second half of your proposed title, which indicates that you're talking about multiple statuses rather than just one.
You would only use "Order's status" when talking about the status of a particular order.
