In a system, each order made by a client has a status, which can be Canceled, In Production, or Delivery.

          "Order Statuses: what do they mean?"



          This is because you're talking about order statuses in general as a category. The switch to the plural "statuses" is because of the second half of your proposed title, which indicates that you're talking about multiple statuses rather than just one.
